Malva pudding by Chef Hector

Ingredients:

  • 1 cup flour
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon apricot jam
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon white vinegar
  • 1 tablespoon melted butter

Sauce:

  • 1 cup sugar
  • 1cup fresh cream
  • 50g butter

Method:

  • 1. Mix all dry ingredients in a large bowl.
  • 2. Add wet ingredients whisk well.
  • 3. Place in a deep roasting tray, cover with foil and put into a preheated oven at 180 degrees. Bake for 20 minutes.
  • 4. Prepare the sauce by melting a cup of sugar in a pad. Add the butter and cream and simmer over low heat until the sugar is dissolved.
  • 5. Remove the pudding from the oven. To check if it is ready, stick a toothpick into the middle of your pudding. If it comes out clean, your Malva is ready!
  • 6. Pour the hot sauce over the pudding.
  • 7. Enjoy with custard, ideal milk, ice cream or cream.
